Course Overview
Edible Ayurveda is a practitioner-focused continuing education course designed to integrate foundational Ayurvedic principles with modern digestive physiology and whole-food nutrition.
This course equips nutrition professionals with a clinically applicable framework for understanding digestive function, metabolic regulation, and symptom patterns through both Western and Ayurvedic lenses.
Participants will learn to translate elemental theory and digestive mapping into practical assessment tools and therapeutic strategies appropriate for client care within scope of practice.
Learning Objectives
Upon completion, participants will be able to:
1. Understand Ayurvedic elemental theory (cold, dry, hot, wet) in the context of digestive physiology, and assessing symptoms.
2. Identify symptom patterns through the lens of Ayurveda, using the principles of Agni (digestive fire), Ama (metabolic residue), and Doshic imbalance.
3. Apply macronutrients, spices and herbs, and lifestyle strategies based on constitutional and symptomatic presentation.
4. Develop food-based and lifestyle recommendations that support digestive resilience and metabolic balance.
5. Recognize patterns of impaired absorption and apply appropriate dietary interventions.
Course Content
This course progresses from foundational Ayurvedic theory into applied digestive physiology, guiding you organ by organ through the gastrointestinal tract to strengthen clinical assessment and personalize nutrition strategies.
PART I: FOUNDATIONS
1. Ayurvedic Elemental Theory
• Cold, Dry, Hot, and Wet as clinical assessment tools
• Doshic pattern recognition in digestive complaints
• Linking elemental imbalance to symptom clusters
2. Macronutrients & Metabolic Regulation
• Protein, fat, and carbohydrate metabolism through a constitutional lens
• Blood sugar stability and digestive capacity (Agni)
• Individualized macronutrient distribution strategies
3. Eating Behaviors & Timing
• Emotional eating and digestive physiology
• Meal timing and circadian rhythm
• Quantity, transit time, and bioavailability
PART II: DIGESTIVE PHYSIOLOGY THROUGH THE AYURVEDIC LENS
An exploration of digestion that bridges Western science with the Ayurvedic principles of Agni, Ama, and Dhatu formation, showing how food becomes us, and how to bring in balance and optimize digestion.

DeAnna Batdorff:
DeAnna Batdorff began her career in 1987 and is the founder of The dhyana Center of Therapeutics, Inc.
She is an Ayurvedic and Tibetan Practitioner and Educator, Massage Therapist, Western Herbalist, Nutrition Counselor and Clinical Aromatherapist.
She presently oversees The dhyana Center in the heart of Sonoma County. DeAnna is committed to inspiring all people to heal, learn and grow through elemental theory, understanding how the body works, and making the connection between mind, body, and spirit.

Mary Sheila Gonnella, NC, BCHN:
Mary Sheila brings 17 years of experience in the nutrition, health, and wellness world.
She provides the information, insight, empowerment, and support you need to take charge of your health and live the life you were meant to live.
Her mastery is in a clinical focus on GI health, hormonal harmony, blood sugar balance, diabetes prevention and reversal, mood regulation, and cultivating right-size body weight.
Mary Sheila is Board Certified in Holistic Nutrition, is a Wahls Certified Practitioner, and Ayurvedic Educator. She was on the faculty at Bauman College for 7 years, and in addition to her private practice, Occidental Nutrition, consults in a medical setting alongside doctors and teaches group medical classes.
Mary Sheila combines holistic nutrition, clinical Ayurveda, adrenal support, and amino acid therapy to create a unique, supportive experience for her clients and students.
Her passion makes nutrition concepts come to life and leads her clients to consistently successful outcomes.
